Colourful bowl with roasted sweet potato, chickpeas, and greens

Why this works

These bowls are built around two textures: sweet potato roasted until the edges caramelise, and chickpeas crisped with spice until they pop. Greens and a lemon yogurt drizzle tie the whole thing together.

It is a meal-prep favourite because the components hold up well, but the secret is keeping them separate until serving. That way the sweet potato stays crisp and the greens stay bright instead of everything wilting into one soft pile.

Ingredients

Metric

  • 700 g sweet potatoes, cubed
  • 2 cans chickpeas, drained
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 120 g spinach
  • 150 g plain yogurt
  • 1 lemon
  • 2 tbsp olive oil

US

  • 1.5 lb sweet potatoes, cubed
  • 2 cans chickpeas, drained
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 4 cups spinach
  • 2/3 cup plain yogurt
  • 1 lemon
  • 2 tbsp olive oil

Method

  1. Heat the oven to 220°C / 425°F.
  2. Toss sweet potato and chickpeas with oil, paprika, cumin, salt, and pepper.
  3. Roast for 25 to 30 minutes, turning once, until browned.
  4. Whisk yogurt with lemon juice, salt, and a spoonful of water.
  5. Build bowls with spinach, roasted vegetables, and lemon yogurt drizzle.

Cook's notes

  • Roast the sweet potato at a high heat in a single layer so the edges caramelise rather than steam.
  • Dry the chickpeas well before roasting so they crisp instead of turning soft.
  • Toss the chickpeas in spices and a little oil, then roast them separately from the sweet potato if you can.
  • Make the yogurt drizzle with lemon and a pinch of salt so it is sharp enough to cut the sweetness.
  • Assemble the bowls just before eating and keep any dressing on the side if packing for later.

What can go wrong

The sweet potato is soggy

Spread it in one layer, do not overcrowd the tray, and roast at a high temperature.

The chickpeas are soft

Dry them thoroughly and give them their own tray so they have room to crisp.

The bowl is too dry

Make the drizzle a little thinner with lemon or water, or add a spoonful of tahini.

Ways to change it

Tahini dressing

Swap the yogurt for tahini whisked with lemon, garlic, and a little water.

Different grain

Serve over quinoa, couscous, or bulgur instead of rice.

Extra greens

Add shredded cabbage, rocket, or steamed broccoli for more crunch and colour.

Substitutions

Sweet potato

butternut squash, regular potatoes

Plain yogurt

tahini dressing, dairy-free yogurt

Spinach

rocket, kale, shredded cabbage

Storage and Reheating

  • Refrigerate components separately for up to 4 days.
  • Add yogurt dressing only when serving.
