Tomato Bean Stew
A rich tomato and white bean stew that turns cupboard staples into a hearty meal.
Why this works
This stew is proof that a tin of tomatoes and a tin of beans can become a serious dinner. The beans give it substance, the tomatoes give it a rich, slightly sweet base, and a little mashing near the end turns the liquid into a thick, glossy sauce.
It is deliberately simple, which means the details matter: letting the onion soften properly, simmering the tomatoes long enough to mellow their sharpness, and finishing with enough salt and acid to bring everything into focus.
Ingredients
Metric
- 2 cans white beans, drained
- 400 g canned tomatoes
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 100 g spinach
- 1 tbsp olive oil
- Lemon juice
US
- 2 cans white beans, drained
- 14 oz canned tomatoes
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 3 cups spinach
- 1 tbsp olive oil
- Lemon juice
Method
- Cook onion in olive oil until soft and translucent.
- Add garlic and oregano, then cook for 30 seconds.
- Add tomatoes and simmer for 10 minutes.
- Stir in beans and simmer until hot and slightly thickened.
- Fold in spinach, season, and finish with lemon juice.
Cook's notes
- Cook the onion until it is properly soft and golden before adding the tomatoes; this is the foundation of the stew.
- Simmer the tomatoes for at least ten minutes so their raw edge cooks out.
- Mash a few beans against the side of the pan to thicken the sauce naturally.
- Taste for acid at the end — a splash of vinegar or lemon can balance the sweetness of the tomatoes.
- Let it rest off the heat for a few minutes so the flavours settle before serving.
What can go wrong
The stew is too acidic
Add a pinch of sugar, a little more oil, or simmer a few minutes longer to mellow the tomatoes.
It is too thin
Mash more beans in and simmer uncovered until it reaches the thickness you want.
It tastes one-note
Add salt, a little acid, and a pinch of chilli or smoked paprika to build more depth.
Ways to change it
Add greens
Stir in spinach or kale at the end until it wilts for a fresher, more colourful stew.
Parmesan rind
Simmer a Parmesan rind in the sauce, then remove it before serving for extra savouriness.
Chilli heat
Add chilli flakes or a spoonful of harissa for warmth.
Substitutions
White beans
chickpeas, butter beans, lentils
Spinach
kale, chard, frozen spinach
Oregano
thyme, Italian seasoning

FAQ
Can I add meat?
Yes. Brown sausage or chicken before cooking the onion.
How do I thicken the stew?
Mash some beans against the side of the pan and simmer for a few minutes.
Can I use dried beans?
Yes. Cook them until tender first, then use them as you would the canned beans, keeping a little of their cooking liquid to thin the stew if needed.
How do I make it thicker?
Mash more beans into the sauce or simmer uncovered. A small splash of olive oil stirred in at the end also adds body.
